Facts:
Dondakaya or Tindora can be a good source of dietary vitamin A since it is rich in beta -carotene. It has a considerable amount of protein and fibre, and a modest amount of calcium.
In India, it is often recommended to diabetics due to its low glycemic index and its possible ability to help regular blood glucose.
Recipe
You will need:
Dondakayalu (sliced straight)
Onion - 1 Chopped
Curry leaves
dry red chillies - 3
green chillies -5
oil
asofateada
salt
chillipowder
1 tbsp of the following:
Cumin seeds(Jeelakara)
Mustard seeds(aavalu)
Chana dal(chanaga pappu)
Urad dal(minapa pappu)
turmeric powder
coriander powder
cumin powder
coconut powder
Method
The recipe is similar to most of the curries we make at home. If you are from Andhra then this recipe is sure to remind you of the traditional dondakaya fry which you eat at weddings in our villages.
take a pan, add some oil to it. when the oil is hot enough add some dry red chillies to it. then add the cumin seeds, mustard seeds, chana dal and minapa pappu,wait till they crackle and add green chillies and chopped onion to the pan. let it fry for a while. add some asofateda and turmeric powder to the onions and fry till golden brown.
Once the onions are ready add some curry leaves and the dondakayalu. fry for 5-7 mins on high heat and reduce the heat and let it cook for about 5 mins. add coriander powder, cumin powder, chilli powder and cook for 2 more mins, then add some salt and coconut powder and fry for 2 mins. check to see if the dondakayalu are propoerly done.
serve hot with roti or rice.
